Banana Cream Pie

Homemade Banana Cream Pie

4 Tbsps Cornstarch
3/4 cup Sugar
1/8 tsp Salt
2 cups Milk (I used whole)
2 Eggs
1 Tbsp Butter
1 tsp Vanilla ( I used Watkins Baking Vanilla)
1 tsp Watkins Banana Extract 
1 9 inch pie shell ( graham or a baked pastry)
1 pint of Whipping Cream, Whipped
4 Bananas, Sliced

Mix cornstarch, sugar and salt and add gradually to cold milk in saucepan.  Stir constantly over medium heat until mixture is thick and bubbles, 4 to 5 minutes.  Beat eggs slightly and add part of hot mixture with a whisk.  Blend and return to saucepan.  Cook, stirring constantly, for 2 minutes.  Remove from heat and blend in butter.  Add Vanilla and Banana extract.  Cool.  Slice 4 bananas and arrange them in your baked pie crust on the bottom.  Pour mixture on top of bananas.   Chill and then topped with whipped cream or a meringue as desired.

Home Made Ice Cream

Although technically not a vintage type recipe.  I have decided to include this recipe because ice cream has been a popular desert and treat ever since the ice cream cone was introduced at the 1904 World's Fair in St Louis.   This super easy recipe can easily be made at home without an ice cream freezer.  Enjoy!

Home Made Ice cream - Easy - No ice cream freezer required

1 14 oz can of sweetened condensed milk
2 teaspoons Watkins Baking Vanilla OR your favorite Watkins Extract
Pinch of salt
2 cups of heavy cream, cold (whipping cream)
1 metal loaf pan 9x5x3, chilled in the freezer


In a separate, large bowl mix together the condensed milk, vanilla or extract, & salt.
Whip the cream with a mixer on medium high speed until firm peaks form, about 2 minutes.
Fold about 1 cup of the whipped into the condensed milk with a spatula.  Then add the remaining whipped cream until everything is well blended.  Pour into the chilled metal loaf pan.  Freeze, covered until completely frozen.

If you are adding mix-ins like fruit, cookies etc.  Freeze the mixture for 2 hours until soft serve consistency.  Swirl in desired mix-ins with a spoon.  Then return to the freezer and continue to freeze for additional 3 hours.

Bob Hope's Favorite Lemon Pie

Bob Hope's Favorite Lemon Pie
1 cup sugar plus 2 Tbsp extra sugar
3 Tbsp. Corn starch
1 cup Boiling water
4 Tbsp.  Lemon Juice
2 Tbsp Butter
4 egg yolks
Pinch of Salt
Grated rind of 1 lemon
Image result for bob hopeCombine corn starch and sugar, add water slowly, stirring constantly, until thick and smooth.   Add slightly beaten egg yolks, butter, lemon rind and juice, and salt.  Cook 2 or 3 minutes.  Pour into baked shell.  Cover with meringue made from 3 egg whites beaten stiff, and 2  1/2 Tbsp.  sugar.  Bake in slow oven 15 minutes, or until light brown.

Wilted lettuce? Add lemon juice to a bowl of cold water and soak the lettuce in the fridge for an hour.

Coca Cola Cake

2 cups all-purpose flour
2 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon Watkins Cinnamon
1 can (12 ounces) cola
1 cup butter, cubed
1/4 cup baking cocoa
2 large eggs
1/2 cup buttermilk
1 teaspoon Watkins Vanilla Extract

1 can (12 ounces) cola
1/2 cup butter, cubed
1/4 cup baking cocoa
4 cups confectioners' sugar, sifted

Preheat oven to 350°. Grease a 13x9-in. baking pan.

In a large bowl, whisk the first five ingredients. In a small saucepan, combine cola, butter and cocoa; bring just to a boil, stirring occasionally. Add to flour mixture, stirring just until moistened.
In a small bowl, whisk eggs, buttermilk and vanilla until blended; add to flour mixture, whisking constantly.

Transfer to prepared pan. Bake 25-30 minutes or until a toothpick inserted in center comes out clean.

About 15 minutes before cake is done, prepare glaze. In a small saucepan, bring cola to a boil; cook 12-15 minutes or until liquid is reduced to 1/2 cup. Stir in butter and cocoa until butter is melted; remove from heat. Add confectioner's sugar; stir until smooth. Pour immediately over hot cake. Yield: 15 servings.

Queen Elizabeth II Cake

Ambrosia Cake

Ambrosia Cake

Measure into sifter:
1/2 Cups Sifted Swans Down Cake Flour
3 teaspoons Baking Powder
1 teaspoon Salt
1 1/4 cups sugar

Measure into mixing bowl:
2/3 cup shortening

Measure into cup:
1 cup milk
1 1/2 teaspoons vanilla

Have Ready:
5 egg whites, beaten to meringue* with 1/2 cup sugar
1 cup Baker's Coconut 
Orange Sections

*For meringue, beat egg whites until foamy; add 1/2 cup sugar gradually, beating only until meringue will hold up in soft peaks.

Now the "Mix-Easy" parts:
Stir shortening just to soften.  Stir in dry ingredients.  Add milk and mix until all flour is dampened.  Then beat 2 minutes.  Add meringue mixture and beat 1 minute longer.  (Count only actual beating time.of count beat strokes.  Allow about 150 full strokes per minute.  Scrape bowl and spoon often.)

Turn bater into pans.  Bake in a moderate oven (350 degree F) 35 minutes or until done.  Spread orange filling. between the layers and snow frosting on the top and sides of cake. 

Fluffy Orange Frosting
2 egg whites
1 1/2 cups sugar
1 dash salt
1/3 cup water
2 teaspoons corn syrup
1 teaspoon vanilla extract
1 teaspoon orange extract - A nice pure one is available from Watkins.

Mix egg whites, sugar, salt, water and corn syrup in top of a double boiler.  Beat over simmering water (being careful that water doesn't touch bottom of bowl your ingredients are in)  an electric of rotary beater.  Beat until frosting in stand stiff peaks.  Remove bowl from water.  Add vanilla and orange extracts.  Tint if desired

My husband loves Lemon Meringue Pie.  It was made regularly by his paternal grandmother for family gatherings.  You mention lemon meringue pie and he lights up.  This refreshing dessert dates back to the 19th century and it is well loved by many.  Bob hope even has a favorite Lemon Meringue pie recipe.
